What "cold pressed" means

A cold pressed oil is squeezed out of the seed mechanically, without heat applied from outside and without a chemical solvent, and is then left to settle and filtered rather than refined. That is why it keeps the smell and colour of the seed. Refined oil goes through further steps — neutralising, bleaching and deodorising — that make it look and taste uniform. "Bull driven" is one way of cold pressing: the press is a wooden mortar and pestle, and bullocks turn it.

Cold pressed or bull driven?

Within each oil, the difference is the press and the price. The cold pressed versions are the everyday oils at the lower price per litre (groundnut also comes in 5 litres). The bull driven versions come from the slower, bullock-turned marachekku, cost more per litre and are also sold in a 1 litre steel vessel. Each oil’s page compares the two side by side with today’s prices.

Coconut oil is mostly saturated, which is why it sets solid in a cool room; groundnut is mostly monounsaturated; sesame is split between mono- and polyunsaturated. How to read an oil label

How to store cold pressed oil

Unrefined oil keeps best closed and in the dark, away from the stove. Pour into a small container for daily use instead of opening the main bottle at every meal. A little sediment is normal; coconut oil sets solid in cool weather and melts again when warm. Use each oil by the best-before date on its label.
