Instructions

Wash foxtail millet in water 2-3 times, then soak it in plain water for 6–8 hours or overnight and drain it completely. Soaked millet cooks in twelve minutes and the grains stay separate. No soak? Use the unsoaked column of the ratio guide below.

Heat cold pressed groundnut oil in a pan. Add mustard seeds, urad dal, and chana dal. Let them splutter.

Add green chillies, ginger, and curry leaves. Sauté for 30 seconds.

Add chopped onion, carrot, and green peas. Sauté for 2-3 minutes until onion turns translucent.

Add 2½ cups water and salt. Bring to a rolling boil, add the drained millet and stir once — just once, to distribute it.

Cover and cook on the lowest flame for 12 minutes without lifting the lid or stirring. Turn off the heat and let it stand covered for 5 more minutes — that resting steam is what finishes the grains evenly. Fluff with a fork, garnish with coriander and serve hot.

Water Ratio & Timing — Soaked vs Unsoaked

Almost every failed millet upma comes down to water. Semolina rava swells on contact, so rava upma runs about 1 : 2.5 by volume and is done in minutes. Whole millet grain is not rava — it has to hydrate all the way to the centre, and how much water it needs depends entirely on whether you soaked it.

These are the same ratios as our complete guide to cooking millets — barnyard is the one exception at 1 : 2, because it is the smallest and softest of the four and turns to porridge with any more.

Why soaking earns its place here. An overnight soak cuts the cooking time by roughly 40%, softens the bran so the grains separate instead of clumping, and reduces phytic acid — the compound in whole grains that binds iron, calcium and zinc and carries them out of the body undigested. Soak the millet before bed in plain water, drain it in the morning, and the upma is a twelve-minute job.

If you forgot to soak — and most weekday mornings you will — add the extra half cup of water from the third column and give it the longer time. Do not try to rush an unsoaked millet with the soaked ratio; that is the gritty, chalky centre people blame the grain for.

Two things that ruin the texture regardless of ratio. First, stirring after the lid goes on: every stir breaks grains and releases starch, which is what makes upma gluey. Stir once when the millet goes into the water, then leave it alone. Second, lifting the lid to check — the steam doing the last third of the cooking escapes, and the top layer stays hard.
