Most store-bought instant idli/dosa mixes blend polished millets with rice flour, anti-caking agents, and stabilisers so the batter ferments faster and pours easier. That convenience comes at a nutritional cost — the bran and germ (where 60–70% of the fibre and minerals live) get stripped out, and the rice flour pushes the glycaemic load right back up.
Orggu mixes go the opposite way. We start with 100% unpolished millet, soak it, sun-dry it, and stone-grind it in small batches. One ingredient per pack. No fillers. The result eats exactly like a freshly fermented idli/dosa batter — soft idlis, crisp dosas — with the full nutrition of whole millet preserved.
Each pack is 400g of single-ingredient millet flour — enough for roughly 30 idlis or 12 dosas.
Mix 1 cup of the mix with 1.25–1.5 cups of water and whisk until smooth (no lumps). Cover and ferment overnight (8–10 hours) at room temperature. In the morning, steam the batter for soft idlis (10–12 minutes) or pour onto a hot pan for crisp dosas. No eno, baking soda, or yeast required — the millet ferments naturally.
Most instant mixes are 50–70% polished rice flour plus additives, which is cheap to produce. Ours is 100% unpolished millet, single ingredient, stone-ground in small batches. Little millet is the most beginner-friendly — it tastes and behaves closest to rice. Foxtail is the next easiest. Once you are comfortable, try kodo for the most traditional Siridhanya flavour, or barnyard if you are focused on weight loss.
