Black jaggery (also called organic jaggery or country jaggery) is traditional unrefined sugar made by boiling sugarcane juice until it solidifies. Unlike white sugar, black jaggery retains all the natural minerals — iron, magnesium, potassium and calcium — that are stripped away during refining.
