Roast the Millet
Wash barnyard millet and dry roast it in a pan for 2 minutes until fragrant. This gives a nutty flavor.

Cook the Millet
Add 1 cup water to the roasted millet. Cook on medium flame until water is absorbed and millet is soft (8-10 minutes).

Add Milk
Add 2 cups milk to the cooked millet. Stir well. Cook on low flame for 8-10 minutes, stirring occasionally.

Prepare Tempering
In a small pan, heat ghee. Fry cashews and raisins until golden. Add saffron strands if using.

Thicken the Payasam
When the millet-milk mixture thickens to payasam consistency, remove from heat. Let it cool slightly.

Add Sweetener & Serve
Add honey (or jaggery) and cardamom powder. Mix well. Pour the ghee-cashew tempering on top. Garnish with grated coconut. Serve warm or chilled.
